Split Pea Soup with Mushroom Bacon

Split Pea Soup with Mushroom "Bacon"
I love soup and will eat it any season. This is one of my favorites. With an Instant Pot, this nourishing soup whips up on just about 30 minutes.

Ingredients
- 2 T Ghee
- 1/2 onion diced to the size you prefer
- 2 ribs celery cut to size you prefer
- 2 carrots sliced to size you prefer
- 1 cup dried split peas, rinsed
- 3 cups water
- 1 bay leaf
- 3-4 thyme sprigs
- 1/2 cup frozen (or fresh) peas
- handful of oyster and baby portabella mushrooms, cut into smallish pieces
- 2 T ghee
- 2 t Braggs Aminos
- 1 t paprika
- 1 T molasses
- salt and pepper to taste
Instructions
- Select "Sauté" function on Instant Pot; melt 2 T ghee then add carrot, onion and celery. Sauté until softened but not too soft, about 5 minutes.
- While the veggies are being sautéed, in a small bowl add the other 2 T ghee, aminos, paprika and molasses. Whisk until combined well.
- Once the veggies are softened, add the rinsed split peas, water, bay leaf and thyme sprigs.
- Turn off sauté function, secure the lid and select High Pressure setting for 15 minutes.
- While the peas are cooking, add the mushrooms to the molasses mixture and coat well. Spread on a non-stick pan and bake in the oven at 450 degrees for 15 minutes. Stir once halfway through cooking time.
- Once the Instant Pot beeps that it is done, manually release pressure, open lid, stir the soup well and add the frozen or fresh peas.
- Remove the mushrooms from the oven, let cool slightly.
- Once the frozen or fresh peas are heated through, salt and pepper to taste.
- Serve the soup warm, topped with the mushroom bacon and fresh parsley.
Notes
- The molasses in the mushroom bacon adds the sour taste, making this a complete 6-taste Ayurvedic meal. If you choose not to make the mushroom bacon, add a teaspoon of miso paste to the soup.
- I usually cook with shallots because onions are too heating for Vata, however, split peas are very cooling and hard on the digestion, so I use onions here to help with digestion, along with other heating elements like thyme and bay. I also get pretty liberal with the black pepper, especially if I'm not feeling super Pitta.
