Steelhead Trout with Lemon and Cilantro Pesto

Ingredients
- 1 bunch cilantro, chopped (stems are fine)
- 1 clove garlic
- 1/4 cuppine nuts
- 1/4 cup olive oil
- 1/4 cup cotija
- juice of 1 lime
- 1 lemon, sliced
- 1 lb Steelhead Trout, or Salmon
- salt and pepper to taste
Instructions
- Preheat oven to 375˚F
- Put the cilantro, garlic, pine nuts, olive oil, cotija and lime juice in a food processor and pulse until chopped to fine consistency, but not liquid (see photo).
- Place trout or salmon in shallow sided baking dish and spread 1/2 the pesto onto the salmon.
- Top with sliced lemon.
- Bake for 35-45 minutes; check for doneness which will depend on the thickness of your fish.
- Serve with rice and remaining pesto at room temperature or warmed slightly.
