Steelhead Trout with Lemon and Cilantro Pesto

Ingredients

  • 1 bunch cilantro, chopped (stems are fine)
  • 1 clove garlic
  • 1/4 cuppine nuts
  • 1/4 cup olive oil
  • 1/4 cup cotija
  • juice of 1 lime
  • 1 lemon, sliced
  • 1 lb Steelhead Trout, or Salmon
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375˚F
  2. Put the cilantro, garlic, pine nuts, olive oil, cotija and lime juice in a food processor and pulse until chopped to fine consistency, but not liquid (see photo).
  3. Place trout or salmon in shallow sided baking dish and spread 1/2 the pesto onto the salmon.
  4. Top with sliced lemon.
  5. Bake for 35-45 minutes; check for doneness which will depend on the thickness of your fish.
  6. Serve with rice and remaining pesto at room temperature or warmed slightly.
