Summer Spiced Tofu Sammie
Yield: 1 sandwich
This tasty lunch whips up quickly and delivers a lot of taste using just a few ingredients.
Ingredients
- 2 slices whole or sprouted grain bread
- 1 T mayo (vegan or otherwise)
- 2 t mint, leaves stacked and sliced thinly
- 1/4 block tofu (pressed or previously frozen then thawed), cut into two slices
- 1 T summer spice blend (recipe here)
- 1 T coconut oil
- few pinches summer digestive salt blend
- handful microgreens
- 1 T pepitas
Instructions
- Heat the coconut oil in skillet over medium heat.
- To give the tofu a firmer texture that will crisp when I saute it, I freeze my tofu the day I buy it, then put it in the fridge to thaw the next morning. Alternatively, press the tofu first to rid it of excess moisture. After slicing the tofu, spread the summer spice blend on a plate and dredge the slices of tofu, making sure all sides are covered.
- Place the tofu in the heated skillet, and then pop your bread into the toaster or toaster oven.
- While the tofu is browning, make the mint mayo. Combine the mint and mayo and a pinch of the salt blend in a small bowl.
- After about 3-4 minutes, flip the tofu and brown the other side.
- When the toast is done, put it on a plate and spread half the mint mayo on one side of each slice. Top with the microgreens.
- When the tofu is browned and slightly crispy, put one slice on top of each slice of toast. Top with pepitas.
