People are always looking for quick and easy recipes, especially for breakfast when they may not have much time. This one is perfect for those cold and dry winter mornings and will pacify aggravated Vata. It's warm, easy, nourishing, super tasty and is ready in under 10 minutes.

Ingredients

  • 1 cup rolled oats
  • 1/4 cup chopped dates
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup golden raisins, raisins, dried cranberries or dried cherries
  • 4 t shredded coconut
  • 2 t flax seeds
  • 1 t Maca
  • 1 t cinnamon
  • 1 t ground ginger
  • 1/2 t turmeric
  • Toppings: salt to taste, sweetener (jaggery, maple syrup, honey) to taste, fresh berries

Instructions

  1. Put all ingredients except for toppings in a pint mason jar or larger.
  2. Shake it until all ingredients are combined.
  3. When ready to eat: heat water to boiling in your kettle, pour 1/2 cup of the Muesli into a bowl, then 1/2 cup of the boiling water from the kettle. Mix well. Cover and let sit for 5 minutes.
  4. After five minutes, uncover, stir, top with a dash of salt and whatever toppings you like. Enjoy!

Notes

I make the Muesli on Sundays and keep my mason jar at the ready for those mornings I need something warm but also need to get right to work. Easy, quick and nourishing!
