Ingredients
- 2 t ghee
- 1/2 t Winter spice blend
- 1 apple, cut into 1/2 inch cubes
- 2 T dried tart cherries or cranberries
- water
- salt to taste
- leftover rice (optional)
- sprinkle of pepitas (optional)
Instructions
- Melt ghee in saucepan, add spice blend and saute until aroma is released.
- Add cubed apple and cherries; stir to make sure all the fruit is coated in the spice mixture. Add a pinch of salt.
- Add water to at least halfway up the fruit, or more if you like it more liquidy.
- Cover and simmer for 5 minutes.
- Serve straight up or over warmed up leftover rice if you need a little more grounding this morning (it soaks up the liquid marvelously and is delicious!). Top with pepitas for some extra texture.
