Ingredients

  • 2 t ghee
  • 1/2 t Winter spice blend
  • 1 apple, cut into 1/2 inch cubes
  • 2 T dried tart cherries or cranberries
  • water
  • salt to taste
  • leftover rice (optional)
  • sprinkle of pepitas (optional)

Instructions

  1. Melt ghee in saucepan, add spice blend and saute until aroma is released.
  2. Add cubed apple and cherries; stir to make sure all the fruit is coated in the spice mixture. Add a pinch of salt.
  3. Add water to at least halfway up the fruit, or more if you like it more liquidy.
  4. Cover and simmer for 5 minutes.
  5. Serve straight up or over warmed up leftover rice if you need a little more grounding this morning (it soaks up the liquid marvelously and is delicious!). Top with pepitas for some extra texture.
